Determination of some water-soluble vitamins in donkey milk.

From a chemical point of view, donkey’s milk is very similar to human milk. In fact, donkey’s milk is characterized by a low casein content which makes it a good substitute to cow's milk in cases of Cow's Milk Proteins Allergy (CMPA). Furthermore, it has a high content of lactose which makes this milk useful for the treatment of osteoporosis in adults, whereas in infants, it promotes bone mineralization and the development of the intestinal bacterial flora. The high content of polyunsaturated fatty acids of the omega-3/omega-6 series in donkey’s milk, could help to counteract cardiovascular and inflammatory diseases. In this work, the content of some water-soluble vitamins in donkey's milk (vitamin B1 or thiamine, vitamin B2 or riboflavin, vitamin B9 or folic acid and vitamin C), was determined, since literature lacks in this aspect
