Der erste Aspekt der vorliegenden Doktorarbeit zeigt, inwieweit Fischdarm-assoziierte Bakterien ein effektives bioprotektives Werkzeug zur Hemmung des Wachstums von Lebensmittelpathogenen und Verderbserregern sein können.Ein zweiter Aspekt beschäftigt sich mit der Hervorhebung des Potentials von NGS Plattformen für die Analyse der intestinalen Fischmikrobiota. Im ersten Teil wurden das antimikrobielle Spektrum und die physiko-chemischen Charakteristika von bacteriocinartigen Substanzen analysiert. Diese werden von Lactobacillen produziert, welche aus der intestinalen Mikrobiota von Stören isoliert wurden.
