This paper builds on a research project exploring what secondary school pupils in England should learn in a modern food technology curriculum. The early stages of the research investigated the views of a range of professionals interested in teaching food technology and suggested a framework for a modern food technology curriculum, which would include: • Designing and making food products; • Underpinned by an understanding of the science of food, cooking and nutrition; • Incorporating an exploration of both existing and new and emerging food technologies; • In the context of sustainable development of food supplies locally, nationally and globally; • Including an appreciation of the roles of the consumer, the food industry and governm...
