High temperatures decrease anthocyanin accumulation and hasten organic acid metabolization, while light promotes proanthocynidin and terpenes accumulation. Temperature and radiation conditions cyclically fluctuate in a daily period under field environment. Indeed, the strength of this daily variation affects berry ripening and quality.
