Ethanol was made from potatoe and their by-products by using different enzymes for mass saccharification process. Safety of produced ethanol was evaluated by examination of higher alcohols and other fusel compounds. Lactic acid bacteria were used for distillers grains (DGGS) conservation. Biogenic amines and microbiological parameters of (DGGS) were evaluated. According to our results, different enzymes have different influence on technological and ethanol parameters and yield. The highest yield of ethanol was obtained from samples prepared with Stargen, Depol 692 ir Ecopulp Tx 200 - A, as well as in control samples, without enzymes.
