The aim of the research is to examine tendencies in producing ice-cream in Lithuania as well as to evaluate the microbiogical contamination of ice –cream along the production chain at the processing plant. The goals of the studies: 1. to analyze the tendencies of producing ice-cream in Lithuania; 2. to evaluate technological process of making ice-cream in a chosen enterprise; 3. to carry out a test ascer tainning microbiological index in all stages in producing of ice-cream; 4. to evaluate the control of microbiological pollution in the process of ice-cream production. 5 tables and 3 pictures illustrating stages of microbiological research were used in the thesis.
