The sudden profusion of olfactory sensations in French literature of the second part of the XIXth century marks a major milestone in literary history. While they had been somewhat scarce and trite prior to 1857, olfactory sensations now mark a crucial evolution in literature. Best characterized as a “deviation,” this newfound use of olfaction primarily serves to shatter two pillars of spiritual thought, religion and love. Deviation can also give rise to full-scale rebellion as the longstanding tradition of discrediting smells is rejected and olfaction is integrated into literature.
