Oil-in-water nanoemulsions can be used as drug delivery systems for the encapsulation of hydrophobic active substances in order to increase their solubility and their bioavailability. However, due to their higher specific area, their stabilization requires higher surfactant concentrations compared to conventional emulsions. Most of the synthetic surfactants commonly used in emulsion formulation are potentially irritant and even toxic, which hinders the therapeutic application of nanoemulsions especially during long-term treatment.
