Zadatak ovog završnog rada je ispitivanje osnovnih kemijskih parametara soka od naranče koja obuhvaća određivanje ukupne suhe tvari, određivanje topive suhe tvari koja je određena refraktometrom, određivanje ukupne kiselosti, pH, određivanje antioksidacijske aktivnosti DPPH metodom i na koncu organoleptičko ocjenjivanje uzoraka između 10 ispitanika. Sva ova istraživanja provedena su na soku od naranče ali različitim postotkom udjela voća: 5 %, 25 %, 50 % i 100 % sok od naranče.
