Abstract: Antioxidant activity of milk is due to the presence of antioxidant anzymes such as catalase, lactoperoxidase, glutathione-peroxidase, xanthin/oxidase, or vitamins and provitamins such as retinoils and carotenoids, tocopherols and ascorbic acid.
