Bir kesimhanede kesimi yapılan kasaplık büyük baş (sığır) hayvanların temizlikleri ile karkasların mikrobiyel kontaminasyon düzeyleri arasındaki etkileşimin belirlenmesi Haziran 2014-Aralık 2014 tarihleri arasında Muğla Belediye Mezbahasına getirilen sığırlar kesimhanenin padoklarında ante-mortem muayene sırasında derilerinin temizliği bakımından 1 (temiz ve kuru) ile 5 (kirli ve ıslak) arasında değerlendirildiler ve görünümlerine göre skorlama yapıldı. Mezbahaya getirilen hayvanların deri kirliliklerinin değerlendirilmesi için toplam 50 karkas (her bir kategori için 10 karkas) seçildi..
