With the decline in mining activity at the end of the Eighteenth century, discouraged settlers moved to other areas in southern Minas Gerais and in the highlands between Rio de Janeiro and the Paraíba river valley São Paulo. The region's fertile soil proved ideal for coffee because of its porosity and mineral content. The cultivation of coffee would transform the economy of the Southeast region and the country, especially in the late Nineteenth and early Twentieth century. Today the state of Minas Gerais continues to be a major agricultural producer, and besides coffee, it produces soybeans and a variety of dairy products.21)...
