Komposisi Kimia dan sifat Bio-Fisika Kimia pada madu merupakan faktor yang menentukan harga pasa madu di tingkat Nasional dan InternasionalHoney has various ingredients that contribute to its unique properties. Honey used for nutritional, medicinal, industrial and an important commodity in the international market. Mineral composition is one of the most important factors in the quality of honeys because its can affects the bio-physic chemical properties. To ascertain quality of Mallawa???s Honey, analysis mineral essential content (Co, Ni and V), and bio-physic chemical of 5 samples from different locationsin its was carried out. Within ICP-OES, cobalt, nikel and vanadium contentsof the samples had average valuesof 0,0358 ppm, 0,0174 ppm, and 0,0100 ppm. Moisture and ash contents values of 24,2629 % and 0,4211 %. EC contents gave an average of 0,6463 mS/cm, while free acid contents hada mean value o f46, 7031 meq/kg with pH of 4,1850 and Refractive index of 1,758. The mean of protein contents are 0,8384 % while fat content are 0,0675 %. Total carbohydrate and Energy values showed average values of 74,4100 % and 301,6013 kal. The results of this samples compare favorably with national and international standards
