This paper proposes to study the interactions between quality labels and environment. It specifically focuses on the environment's role in the definition of quality and the construction of this interaction at different spatial and temporal scales. The parallel histories of agro-environmental problems and quality show a growing awareness of the natural environment in quality policy. Nevertheless there are many differences according to the type of quality (generic/specific), but also to labels and supply chains. The example of wine and dairy PDO shows the complexity and the difference between trajectories of quality and environment.
