This article assumes the following hypothesis: the problematic of the quality based on origin of the agro-food products is a priori independent of environmental criteria, but the production practices under signs of quality, often anchored in the traditional know-how, are attentive to the respect of the natural environments and evolve towards taking into increasingly explicit account of this criterion in the specifications of production conditions. In other words, the evolution of the expectations of the society would be in a position to transform the "origin products model" in order to make it a possible lever of a policy for improving agriculture-environment relationships, complementary and convergent with the European CAP.
