With all the detailed reports on the colorimetric determination of proteins in fish muscle with the use of Biuret reagent, very few attemps were made for the estimation of proteins in a solid state. So, some studies were made on this problem, and the wished for result was got by the “Direct Protein Reaction” method, with the aid of the procedure of dissolving it by NaOH in Biuret reagent with no destruction of the peptide bond in protein. Far less amount of sample than that of Kjeldahl method was needed in the new method, and it was done within only the lapse of time from 15 to 20 minutes
