Microcapsules containing vitamin E of antioxidant was prepared by the solvent evaporation. In this preparation method, particle size of microcapsules containing vitamin E was about 10 um and polydispersity was held. By adding microcapsules containing vitamin E to the unsaturated fatty acid, it was possible to suppress the auto-oxidation. Furthermore, it was confirmed that the antioxidant effect of the vitamin E microcapsules significantly increased in the coexistence with microcapsules containing vitamin C
