Onion is considered to be one of the world most important vegetable crops. In Sudan onion is commercially cultivated and stored by farmers using traditional ways such as storage in cottages made of straw or mud. Previous research by Shambat Food Research Center concentrated on this type of storage. In this research, experiments were conducted to investigate the effect of cold storing, at 0 oC temperature and 65% relative humidity, on two common varieties (Red Saggai, and Yellow Camelen).
