The consuption of fruit pulp and your derivatives have been increased, because of their nutricional properties, flavors variety and aromas, and the increasing search for the products with in natura food characteristics. The pulps are used for direct comsuption or as a raw material for juice, ice cream, yogurt industries. The process to obtain pulp should be done in right hygiene conditions, followed by apropriated storage, to assure integrity and quality of products.
