Soluble carbohydrates content, arabitol dehydrogenase (ADH) and mannitol dehydrogenase (MDH) activities were measured in the tissues of fruit bodies of Shii-take (Lentinus edodes SING.) at different stages of development. Arabitol and mannitol accumulated in growing fruit body and arabitol increased in the stipe tissue. During storage at 15℃ after removing the fruit body from logs, fruit body growth stopped and arabitol content decreased rapidly. Mannitol content, on the other hand, increased in fruit body tissues. ADH activity was higher in the pileus tissue than in the gill and stipe. ADH activity decreased accompanying the decline of arabitol content after harvest.
