The correlations of the intake of the following nutrients to the serum levels of total cholesterol (TCH), high density lipoprotein (HDL) cholesterol, low density lipoprotein (LDL) cholesterol, and triglyceride (TG) were investigated in 249 female subjects (aged 55.3 ± 6.0) who participated in our intervention study aiming at decreasing the TCH: energy, protein, carbohydrate, lipid, saturated fatty acids, monounsaturated fatty acids, polyunsaturated fatty acids, and cholesterol. Daily intakes of various nutrients were estimated in face-to-face interviews by a dietitian trained for the purpose and also using a food frequency questionnaire with dedicated computer software.
