Bu çalışmada; yeni bir teknoloji olan mikrodalga tekniği kullanılarak yeşil ve siyah çaylar elde edilmiştir. Ardından yeşil ve siyah çaylarda toplam antioksidan aktivitesi, fenolik madde ve duyusal analizler gerçekleştirilmiştir. Çay örneklerinin toplam antioksidan aktivitesi tayininde DPPH serbest radikal yakalama metodu kullanılmıştır.
