Ancak bu yüksek içerik pişirme işleminden etkilenmekte ve antioksidan kapasitesinde azalmalar olmaktadır. Pişirme işlemi sonucunda bile siyah pirincin benzerlerine nazaran yüksek antioksidan içeriğine sahip olduğu görülmektedir. Bu çalışmada siyah pirincin fenolik içeriği ve antioksidan kapasitesi incelenmiş ve farklı pişirme yöntemlerinin fenolik içeriğini ve antioksidan kapasitesini nasıl etkilediği araştırılmıştır.
