The olive pomace residue is a material with lignocellulosic features available in the Alentejo region which may be enhanced by the production of ethanol. In the present work a study was developed in order to investigate the influence of the phenolic compounds present in the extracted olive pomace and the water used in their washing after pre-treatment, in the saccharification process of cellulose by the enzymatic complex Celluclast 1.5L.
