Electrostatic interactions are important in food systems, and modeling these systems correctly can lead to insights into their structure and dynamics when electrostatic interactions are correctly included. Here we give a brief review of electrostatics relevant to food systems, and discuss ways of approximating the electric fields and potentials. We emphasize the importance of correctly representing the boundary conditions. We also stress the importance of recognizing the various length- and time-scales associated with electrically charged systems, as well as their interactions.
