publisher[Synopsis] Three trypsin inhibitors were isolated and purified from quinoa seeds (Chenopodium quinoa) by extraction with 0.1M sodium chloride, heat treatment, ammonium sulfate precipitation, and chromatographies on SP-Sepharose Fast Flow, Sephadex G-75 and DEAE-Sepharose Fast Flow columns. The final preparations, QTI- I , - II and - III ,were homogeneous on electrophoretic anaylsis. The molecular weights of QTI- I , - II and -III were about 3,700, 3,600 and 3,550 by SDS-polyacrylamide gel electropholesis, and about 7,500, 7,400 and 7,300 by gel-chromatography, respectively. These inhibitors inhibited bovine trypsin at an inhibitor-enzyme ratio of 1:1
