Chemical composition and nutritional potential pearl of millet grown in Jazan region of Saudi Arabia

The proximate composition, sugars, mineral content, amino acids profile, antinutritional and in-vitro protein digestibility of pearl millet is a good source of Saudi Arabia were determined in this study. The results showed that pearl millet is a good source of carbohydrate (67.26%) and protein (14.52%), but not lipid (5.77%). Sugar analysis revealed the presence of maltose, glucose and fructose. The seed contains substantial amount of potassium and low content of calcium, iron and zinc. Amino acid composition revealed high content of glutamic acid (23.12%), leucine (10.89%), alanine (8.13%) and aspartic acid (7.78%) with lysine (2.35) being the limiting amino acid. Antinutritional study showed that the grain contains high level of phytic acid and low content of trypsin and amylase inhibitors, and tannin. In-vitro digestibility of the grain protein revealed a relatively high value (85.78%)
