Three sorghum varieties Hamra (red), Shahla (red-white) and Baidha (white) cultivated in Jazan province (Southern of Saudi Arabia) were analyzed for proximate composition, sugars anti nutritional factors level and amino acids content. The results revealed that the protein ranged from 14.51 to 14.80% fat 3.58 to 4.47%, fiber 1.64 to 2.26% and carbohydrate 68.34 to 69.65%. All sorghum varieties were found to contained glucose, fructose, sucrose, and maltose. The anti-nutritional factors level evaluation showed trypsin inhibitor activity (TIA) (26.93 to 27.90 TIU/mg sample), amylase inhibitor ranged from (28.53 to 51.85µmole maltose/g sample), tannin (0.07 to 0.81% as catechin equivalent) and phytic acid (330.80 to 361.10 mg/100gm sample).
