Proximate composition and the content of sugars, amino acids and antinutritional factors of three sorghum varieties

Three sorghum varieties Hamra (red), Shahla (red-white) and Baidha (white) cultivated in Jazan province (Southern of Saudi Arabia) were analyzed for proximate composition, sugars anti nutritional factors level and amino acids content. The results revealed that the protein ranged from 14.51 to 14.80% fat 3.58 to 4.47%, fiber 1.64 to 2.26% and carbohydrate 68.34 to 69.65%. All sorghum varieties were found to contained glucose, fructose, sucrose, and maltose. The anti-nutritional factors level evaluation showed trypsin inhibitor activity (TIA) (26.93 to 27.90 TIU/mg sample), amylase inhibitor ranged from (28.53 to 51.85µmole maltose/g sample), tannin (0.07 to 0.81% as catechin equivalent) and phytic acid (330.80 to 361.10 mg/100gm sample). The amino acid contents of the three sorghum varieties show similar profile and they were rich in glutamic acid, leucien and alanine with lysine being the first limiting amino acid followed by sulphur containing amino acids
