A study was made of the carcass characteristics and summer evolution of 28 female Cervus elaphus (aged I to 7 years and weighing from 40 to 100 kg) shot with a hunting rifle in their natural habitat and without feed supplements. Average weight at slaughter was 67.4 kg, and carcass yields were as follows: abattoir 52.9 p. 100, commercial 49.9 p. 100, real 62.9 p. 100, the offals accounted for 32.5 p. 100 of live weight. Carcass measurements and indices show a clear predominance of length and depth diameters, and low degree of conformation (UG=3.38, Th/ G=1.57, Wr/Th=0.7, G/F=0.5).
