We studied the influence of processing methods and collection date on the nutritional quality of marc from grapes harvested in the Montilla-Moriles denomination of origin. The results obtained reflect a high fibre and low protein content in this type of residue. The differences between the marcs produced by the different processing firms studied were quite small.
