Proposed cattle classification of carcasses of retinto and charolés x retinto bovines

This experiment was carried out on a total of 489 bovines distributed in the following way: 50 calves, 164 yearlings and 50 cows, thoroughbred Retintos, and 70 calves and 155 yearlings of Charolais x Retinto. The criteria used for the classification of the carcasses were: age, sex, carcasse weight and length, compacity index and thickness of fat covering. The subjective criteria were: outline of the leg which indicated the grades of conformation represented by the letters in CORDUBA (C = Superior, 0 = very good; R = good; D = acceptable; U = inferior and A = industrial); colour of the meat and colour of the fat. 38% of the Retinto calves showed a compacity index between 1.41 and 1.62 (R = Subconvex outline): 71.4% of the crossbreed calves have 1.7 (0 = convex outline). In the Retinto yearlings 33.5% were found to be between 2 and 2.2 (R · subconvex outline) and in the crossbred the compacity index was 2.08 (0 · convex outline). 50% of the old cows were -found to be between 1.25 and 1.54 (B = concave outline).La realización de esta experiencia se ha basado" en un total de 489 bovinos distribuidos de la siguiente manera: 50 terneras, 164 añojos y 50 vacas puras de raza retinta; y 70 terneras y 155 añojos charolés x retinto. La propuesta de clasificación de sus canales se ha realizado en función de los criterios: edad, sexo, peso y longitud canal, indice de compacidad y espesor de la grasa de cobertura. Los criterios subjetivos serían: perfil de la pierna, que refleja los grados de conformación, representados por la palabra CORDUBA (C = superior; 0 = muy buena; R = buena; D = aceptable; U = inferior y A = industrial); color de la carne y color de la grasa. El 38% de las terneras retintas presenta un indice de compacidad entre 1,41 a 1,62 (R = perfil subconvexo); el 71,4 de las terneras cruzadas tienen 1,7 (0 = perfil convexo). En añojos de raza retinta, el 33,5% se sitúa entre 2 y 2,2 (R = perfil subconvexo); y en los cruzados, el índice de compacidad es de 2,08 (0 = perfil convexo). En las vacas de desecho, el 50% se encuentra entre 1,25 y 1,54 (B perfil cóncavo)
