Pumpkin peels and seeds have nutritional and functional potential and may be indicated for the food industry. The objective was to elaborate and evaluate the bromatological and microbiological characteristics of flours from peel (PPF) and pumpkin seed (PSF) for later application in bread-making. The pumpkins were sanitized, peeled and their seeds removed. The peels and seeds were dried in an oven, crushed and sieved to obtain the flours. The results showed higher levels of moisture, ash, dietary fiber and carbohydrates in the PPF, while higher levels of protein, fat and energy value were obtained in the PSF.
