Enzimi su biološki katalizatori koji pri definiranim uvjetima ubrzavaju biokemijske reakcije u živim stanicama i izvan njih. Proteaze su enzimi koji kataliziraju hidrolizu peptidne veze u proteinima. U eksperimentalnom dijelu ovog rada korištene su tri komercijalne proteaze: Alkalaza, Novozyme 37071 i Novo-Pro D, s ciljem hidrolize proteina u otpadu ljuski rakova. Navedeni proces je jedan od koraka izolacije hitina iz ove vrste otpada. Ova biološka metoda uklanjanja proteina ima brojne prednosti ispred kemijskih metoda.
