This paper reports on the results of a survey of all Japanese restaurants in the Brisbane city area of Queensland, Australia. This survey was conducted in October 1992 in order to determine the knowledge which owners/managers/chefs of these restaurants nave about giant clam meat and their interest in using it. The survey results show that most of chefs in these Japanese restaurants lack experience in cooking or using giant clam meat although many of them have knowledge about giant clams and know some potential methods of preparing it.
