The aim of the study was to characterize the market in beef and its consumption world and in Poland. Consumption of beef is characterized by a great diversity in different countries. In Uruguay, the consumption of beef is up to 61.3 kg/person while in Poland the consumption of such meat is one of the smallest rate of 1.6 kg/person. One of the factors affecting the change in the structure of meat consumption is to increase the income of the population. In the European Union, the structure of consumption of meat has evolved since the enlargement of the community of the new Member States.
