Shiga toxin-producing Escherichia coli (STEC), which are associated with large-scale outbreaks, often involve raw or undercooked contaminated food such as raw milk cheeses, meat, and vegetables. Hygiene measures implemented from producer to consumer reduce the risk of food contamination and therefore of STEC infections, but do not eliminate it entirely. The interest in developing novel preventive and therapeutic strategies against this pathotype is evident for the preservation of the food industry and the health of consumers, especially in light of the lack of relevant therapy for STEC infections.
