This study concerns the use of electrodialysis to treat effluents from the food processing industry. The fluid chosen for study is whey. The understanding of ionic interactions during the demineralization of synthetic solutions of known ionic composition gives rise to an experimental study and modeling. The proposed model simulates demineralization by electrodialysis, based on a calculation of the apparent membrane mobilities of the ions present in the medium. The model was also used to highlight the interactions between complexation equilibrium and calcium elimination by electrodialysis in whey. The results have been used to implement a process for the thermal precipitation of a-lactalbumin at its isoelectric point, using demineralized whe...
