Through numerical and experimental approaches, this work concerns the process of microwave pasteurization in a food matrix, to understand its mechanisms for future improvement. In seeking to highlight the existence of non-thermal effects, three approaches have been proposed: (i) comparison of conventional heating / microwave by imposing similar thermal histories; (ii) comparison between pulsed or continuously modulated microwave energy input on microbial inactivation and (iii) demonstration of the influence of electric field amplitude during sublethal temperature treatment.
