インド北部ラダーク山岳地帯の移牧民の生業構造 : ドムカル村における食料摂取の視座から

The food intake of agro-pastoralists was surveyed in the hilly high altitude of Ladakh，northern India to understand the characteristics of those subsistence，to discuss their adaptation strategy to high altitude circumstances and to reconsider the pastoralism theory through the case study of transhumance. The characteristics of their food intake are 1) the daily food intake is composed by 5 times such us morning tea，breakfast，lunch， evening tea and dinner，2) they don't take any meat in normal daily life， 3) necessary nutrients are mostly supplied by taking beans，fresh and dry vegetables，milk products and cereals，4) cereals contribute mostly to the nutrient intake，5) the intake of purchased wheat and rice become bigger than self-supplied barley，6) the milk products used as butter salty tea and sweet milk tea has been important traditional food resources to supply fat to their intake，7) beans are important to supply protein to their intake especially in winter and spring，8) they basically use hot spices to add strong taste to dishes. The adaptation strategy of Ladakh agro-pastoralists into high altitude circumstances is summarized from the point of food intake as 1) they could extend their life space into high altitude by utilizing cereals，cow-yak crossbred，and beans which are cultivatable in high altitude and 2) they chose not to eat meat，but to take directly cereals，vegetables，milk products to increase food efficiency maximally for sustaining a certain population in such limited land area for food production as hilly high circumstances. It was considered that Ladakh agro-pastoralists put high intention into "modesty" to coexistence with more peoples in high altitude circumstances. 栄養学的視点から、移牧民の生業構造の特徴を把握し、高地環境への適応戦略を考察し、移牧とい う事例を通した牧畜論を再考するために、インド北部のラダーク山岳地帯において移牧民世帯と定住 世帯について現地調査をおこなった。食料摂取の特徴は、1)起床後直ぐの目覚めのお茶、朝食、昼食、 夕方のお茶、晩食のl日5回の食事で組み立てられていること、2) 日常の食において肉は摂取され ていないこと、3)肉を摂取せず、豆類、新鮮・乾燥野菜と乳製品を多用し、穀物類を摂取すること により、必要な大部分の栄養素はまかなわれていること、4)食料摂取における穀物類の貢献度は食 材の中では最大であること、5) 自給する大麦よりも購入した小麦・米の方が摂取量は多くなってい ること、6) 塩バター茶や甘乳茶を頻飲するために脂肪摂取において乳製品は伝統的に重要な食材と なっていたこと、7) 特に冬・春において豆類の存在はタンパク質供給源としては重要であること、8) 味付けに強烈な風味を添えるスパイスを多用していること、とまとめることができる。そして、栄養 摂取の視座からラダーク移牧民の高地環境への適応を分析すると、l) 穀物類、ヤク交雑種、そして、 高地でも栽培可能な豆類を巧みに利用し、また、2) 限られた土地面積という山岳環境で、ある一定 の人口を扶養するために肉を摂取せず、食材の利用効率を最大限に高めるために穀物類、野菜、乳製品とを摂取する戦略をとっていると、その特徴をまとめることができる。ラダークの人びとは、肉と いう贅沢品を食うという貪欲性よりも、より多くの人びとと共存せんがために穀物類、野菜、乳製品 を食うという「謙虚性」で生きているのである
