This thesis develops the implementation of Open Effective Field Theories in primordial cosmology. Offering a unique window onto unknown physics, primordial cosmology faces uncertainties regarding extensions to the minimal framework of single-field slow-roll inflation. Open Effective Field Theories aim at incorporating the effects of hidden sectors onto this minimal framework. By capturing non-unitary effects such as dissipation and decoherence, they shed new lights on the physics at play in the early universe. In an introductary part, we provide a pedagogical introduction to the implementation of Open Effective Field Theories in cosmology.
