Oleogels are structured systems of vegetable oils using gelling agents. The mixture of oleogels and hydrogels constitutes a new system, called bigel or hybrid gel, which combines the properties of both structured phases. However, bigels have been studied so far mainly in pharmaceutical and cosmetic applications, while the research concerning food products is limited. Therefore, the main research objective of this PhD thesis was the design and study of the properties of oleogels and bigel systems, and then the incorporation of selected bigels into meat products as potential fat substitutes.
