In many industrial processes, such as high-pressure homogenisation or water-oil separation, turbulent and multiphase flows are involved. To optimize those processes, coalescence and fragmentation need to be controlled since they impact directly the size distribution of drops and bubbles. The occurrence of those phenomena can be predicted using adapted models. However, the presence of surfactant molecules at the interface between two fluid phases can change radically the phenomenology of drops break up and coalescence, and their effect has not been properly included in existing models yet.
