Leafy vegetables are source of macro and micronutrients that play major role in maintaining healthy living. The chemical composition of undefatted and defatted vegetables; Amaranthus hybridus , Curcubita pepo and Gnetum africana was analyzed using the methods of Association of Analytical Chemist (AOAC) 1990. The moisture content of undefatted A. hybridus, C. pepo and G. africana was 8.35% ± 0.05, 8.55%± 0.01 and 7.60% ± 0.01 respectively while defatted samples had 17.60% ± 0.01, 18.70%± 0.02 and 15.00% ± 0.01 respectively. Undefatted A. hybridus, C. pepo and G. africana had 1.60% ± 0.02, 4.15% ± 0.02 and 7.10% ± 0.02 of crude lipids respectively.
