Antinutritional substances (non-nutritional substances) are compounds naturally occurring in plants that can limit or prevent the use of nutrients or have a harmful effect on the human body. Primary substances such as proteins, carbohydrates (non-starch polysaccharides) and vegetable fats are reserve, building and energy material for plants. Secondary anti-nutritional substances are protein compounds, which include products of biochemical changes. These compounds do not perform any nutritional functions. Their role is to protect plants against pests, predators, microorganisms, fungi and moulds as well as unfavourable conditions that inhibit their growth and development.
