As food supply chains represent a hotspot of climate change, a rapid transition toward more sustainable processes and operations is expected. Whilst research provides decision-support models to optimize food ecosystems, the application of these techniques in practice is often discouraged by a lack of knowledge and visibility on the hidden food networks’ performance and impacts.
