The principal use of turmeric worldwide is as a major ingredient in curry powder, but it is also used in other spice mixes. It was treasured by the ancients not only for its fragrance and flavour but also for its brilliant yellow colour. It is mentioned in the ‘Vedas’ that turmeric had been used at the time of marriage, worship and other religious ceremonies of the Hindus. Even now it is considered a sign of good omen and given prominence in functions, festivals, etc. The important uses of the turmeric are briefly described here in terms of its medicinal value, food value and industrial value.
