Chemical Composition of Some Legumes

The distribution of essential amino acids, from hydrolysates of albumin and globulin were studied: Tryptophan, cystine and methionine invariably appear to be the most common limiting amino acids in most of the seeds. No single seed has been found to be nutritionally complete with respect to essential amino acid content
