Main description This dataset depicts the catalysis of the fluorogenic substrate MUF-triNAG to the fluorescent substrate MUF by hen egg-white lysozyme, for fixed concentration of enzyme and variation of concentration of initial substrate. It was originally documented in Phys. Chem. Chem. Phys., 2020, 22, 16143-16149 (https://doi.org/10.1039/D0CP02469D) and then used as a study case for the webserver interferENZY (a web-based tool for enzymatic assay validation and standardized kinetic analysis; visit https://interferenzy.i3s.up.pt for more information).
