Volumetric and viscometric studies of mono- and disaccharides in water and in mixed solvent (formamide + water) systems at 293.15, 303.15 and 313.15 K

Department of Chemistry, Agra College, Agra-282 002, Uttar Pradesh, India E-mail : mukhtarsingh2003@rediffmail.com Manuscript received 8 May 2006, revised 8 February 2007, accepted 27 February 2007 Apparent molar volumes (Vᶲ) and viscosities (ɳ) of solutions of mono- and disaccharides viz. glucose, fructose, sucrose and maltose have been determined in water and in [formamide (FA) + water] mixed solvent systems of varying compositions (10, 20 and 30%, v/v) at 293.15, 303.15 and 313.15 K as a function of molar concentration. The vᶲ and ɳ] data have been analysed in the light of Masson and Jones- ole equations respectively. The activation thermodynamic quantities (∆µ1o#,∆µ2o#1°#, &fl2°#, ∆H2°# and ∆S2°#) of viscous now for mono- and disaccharides in water and in (formamide + water) mixed solvent systems have been determined at 293.15, 303.15 and 313.15 K. The results in regard to solute-solvent and solute-solute interactions in water and (formamide + water) mixed solvent systems have been discussed in terms of the values of constants of Masson and Jones-Dole equations. The results of the study reveal that mono- and disaccharides behave as structure makers in water and also in (formamide + water) mixed solvent systems
