Glucosinolates and their metabolites isothiocyanates if presented in food are capable to inhibit occurence of cancer in experimental animals. Their consumption in food lowers the risk of the incidence of lung, prostate, breast and colon cancer in man. The effect of isothiocyanates depends on the quantity (concentration) used and also on the genetic background of cells used in the experiment. The chemo-preventive effect of the isothiocyanates is based on the modulation of enzymes which are necessary for activation or detoxification od carcinogens and also on the inhibition pro-inflammatory and pro-angiogenic signal pathways.
